First up in the R&D Series is jerky's strange but super chill cousin from South Africa, Biltong. This is a unique take on jerky in that is uses very few spices and flavorings, and is also dried BEFORE it is sliced, giving it an amazing prosciutto-like taste and texture. The minimalist approach to the marinade lets the quality of Roseda Beef's Black Angus truly shine. We've added a touch of black garlic to the recipe to throw the savory meter into overdrive.
